Shrimp & Chicken Kabobs

Super easy, throw together meal for a light and simple summer dinner. Great for cookouts as well. I plan to make this when we head to the beach in a few weeks with Mike's family and I can't wait to have it again!


Shrimp & Chicken Kabobs

1/4 pound large raw shrimp, peeled
2 boneless chicken thighs, cut into 1 inch pieces
1/3 cup vegetable oil
1/4 cup soy sauce
1/4 cup lemon juice
2 Tbs. sugar
2 Tbs. vinegar
1 tsp. crushed red pepper
1 each of yellow, orange, red bell pepper
1 medium white onion
3-4 medium white button mushrooms, sliced or cut into fourths
1 can pineapple chunks

Combine ingredients for marinade in a small bowl and whisk until mixed well. Pour over meat and vegetables in a gallon sized plastic bag and marinade for 4-6 hours. Prepare grill to medium-high heat. Skewer ingredients in whatever order you want. The vegetables and shrimp will cook a little faster than the chicken, so you may want to do skewers of chicken only, and then mix the rest and stagger the cooking so they are all done at the same time.
