This is another recipe that I found on the Chaos blog. I will admit, it looks a lot better than I thought it tasted, which disappoints me a little. I like all the ingredients separately, and maybe it was just the way I made it, but it's probably not a recipe I will go back to often unless I try to make a few changes to it.
Coconut Lime Chicken

2 chicken breasts
zest of 1 lime
1 tsp. cumin
2 Tbs. soy sauce
1 tsp. salt
2 Tbs. sugar
2 tsp. curry powder
1/2 cup coconut milk
1/2 tsp. red pepper flakes
3 Tbs. oil
lime wedges
Place chicken breasts in a large ziplock bag and pound until flat. Whisk all ingredients, except lime wedges, together in a bowl. Pour marinade into bag and marinate for up to 2 hours. Heat a non-stick skillet or grill pan to medium-high heat and cook chicken, about 5-6 minutes on each side, or until done. Pour remaining marinade in a small saucepot and bring to a boil, stirring frequently. Set aside to use as a sauce if you prefer. Squeeze fresh lime over chicken once done.
I served this over coconut rice.
