I'm SO glad the weather is warming up and we're able to pull out the grill again. BBQ chicken is a favorite of mine, and it makes me feel like summer is right around the corner. Once again there isn't truly a "recipe" for this, but I'll give you my usual directions. Mike is in charge of the grill and he does a great job of continually basting the chicken as it's cooking to get the best flavor. I'm having to be pretty creative with my sides, as my list of produce is dwindling, so I roasted some potatoes and home-grown green beans, which turned out pretty good.

BBQ Chicken
chicken breasts (bone-in, or boneless)
bbq sauce
salt
pepper
garlic powder
In order to cook the chicken all the way through, but not allow them to dry out on the grill, I boil them for about 5 minutes before marinating. The marinade is super simple - just a mixture of bbq sauce, salt, pepper, and garlic powder - and there isn't a magic number on how long it needs to marinate. Grill over low heat until done.
Roasted Potatoes & Green Beans
4 medium size potatoes, cubed
fresh (or thawed) green beans
olive oil
salt
pepper
rosemary
Preheat oven to 450˚F. Boil potatoes and green beans for approximately 3 minutes and drain. Transfer to large baking sheet and sprinkle with olive oil, salt, pepper, and rosemary. Roast, stirring often, for about 15-20 minutes, or until potatoes are soft.
