Peach Ice Cream

Peaches are in season here in North Carolina, and the farmers market is busting at the seams. I picked up quite a few last weekend and one of my favorite summer things is homemade peach ice cream. With the use of my ice cream maker, it's super simple.


Fresh Peach Ice Cream
adapted from Cuisinart
makes approximately 2 qts.

3 cups fresh peaches, sliced
4 Tbs. lemon juice
1 1/2 cups sugar, divided
1 1/2 cups whole milk
2 3/4 cups heavy cream
1 1/2 tsp. vanilla extract

Combine peaches and lemon juice with 1/2 cup sugar in a small bowl and set aside. In another medium size mixing bowl, add milk and remaining sugar, and mix until sugar is dissolved. Stir in cream, some of the juice from the peaches, and vanilla. Pour mixture into freezer bowl and turn machine on for 20-25 minutes or until thickened. Five minutes before mixing is complete, add sliced peaches and mix in completely. Pour ice cream into freezer safe container and freeze for 2 hours.
