Pantry Challenge: Dinner #14

Meatloaf is definitely not a staple in our house, though when we decide to make it, I do enjoy it. And, it is pretty simple to put together. This is a different recipe than one I've posted before. It wasn't by any means better, just different.


Meatloaf
adapted from Southern Living

1 lb. ground beef
9 crackers, crushed
1/2 onion, chopped
1 egg, beaten
1 Tbs. worcestershire sauce
1 tsp. yellow mustard
1/4 cup brown sugar
1/2 cup ketchup

Preheat oven to 350˚F. Combine all ingredients except sugar and ketchup in a large food processor bowl. Process together until completely mixed. Place mixture into a lightly sprayed bread loaf pan. Bake for 1 hour. Remove from the oven and drain. Stir together the ketchup and brown sugar and pour over top. Bake another 15 minutes or until meat reads 160˚ on a thermometer.

**I did cover the meatloaf with the sugar and ketchup mixture, but will probably not do that again. It was incredibly sweet. I will probably try covering it with just ketchup if I make this again.

Hey! Just want to say: keep the recipes coming!! I love this blog and refer to it frequently when I am doing my meal planning!
And I recently tried a new meatloaf recipe with a sweet topping like this and I really liked it! Must be my sweet tooth. :)
